We can make lots of gravies as an accompaniment for Roti / Naan. For any parties or get together, if we plan for a North Indian Menu, we will surely have roti/naan and 2 gravies, one dal variety and also one dry curry. Many of us love having Roti/Naan with dry curry instead of making conventional dal or gravy varieties. Also dry curries would make a perfect accompaniment for Pulao varieties or even simple Jeera Rice. Most of us make Aloo Dry curry or Aloo methi for dry side dish. Instead of making plain potato stir-fry, we can try adding other veggies like cauliflower, yard beans etc along with potato makes the dry curry even more interesting. Turnip Stir-Fry in Yogurt Sauce is also an awesome accompaniment for Roti/Naan even for Pulao varieties.
In this dry curry, we are first going to stir-fry cubed turnip and potatoes and then toss it in onion masala along with yogurt-besan sauce and cook in low flame till the veggies absorb all the masala and yogurt sauce. Notes:
- Stir-Fry the turnip and potatoes till light brown. Again we will be cooking them in yogurt sauce and so no need to cook fully
- We can replace turnip with sweet potato, yard beans, cauliflower etc
