Lemon chia cake recipe a mildy tangy lemon flavoured cake with the goodness of whole wheat flour.These days I mostly use whole wheat flour for baking else use homemade maida.So more whole wheat baking experiments to be expected here in this space.:) This lemon chia seed yogurt cake was soft with a mild crust on top, tasted soo good.
I tried this cake from here the cake was absolutely delicious inspite of me replacing with brown sugar and whole wheat flour.The kids loved it and happily took it for their snackbox.I used my bundt pan so the cake was bite sized perfect for snackbox.
Lemon chia cake recipe
Lemon chia cake recipe using whole wheat flour.
- 1 cup whole wheat flour
- 1 tbsp chia seeds
- 1/8 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
Others:
- 4 tbsp unsalted butter
- 1/2 cup brown sugar
- 1 large egg
- 1/2 cup curd
- 1 tbsp lemon juice
- 1/2 tsp lemon zest

Preheat oven at 180 deg C. To a mixing bowl – add flour, baking powder,baking soda and salt.Add chia seeds to it.

Mix well and set aside. To another mixing bowl add sugar and butter.

Whisk well until creamy.Now take 1 egg which is at room temperature.

Add the egg and whisk well.Now add the flour mix little by little alternating with curd.

Add flour whisk then add little curd.

Repeat this until both flour and curd is emptied.

Finally add lemon juice and lemon zest.

Mix well.Take a pan(I guess its 4 inch) grease with butter, sprinkle flour dust the extras and get it ready.

Transfer the batter into the pan.Bake in preheated oven at 180 deg C for 35-40 mins or until the top turns golden and crusty.You can insert a toothpick and check if its done, it it sticks then bake for few more mins.

Cool down completely then slice and serve.
- The cake is mildy sweet, if you want increase sugar.As I used brown sugar it was a bit mild sweet only.It is perfect with tea.
- If you want you can make lemon glaze like here.
