Lemon poppy seed muffins recipe a light ,fluffy and tasty snack.
I took this recipe as base and tried it, the muffins turned out so good.I was skeptical how eggs and lemon combo would go but believe me they tasted just awesome and the crunch from poppy seeds was a fantastic add on.
I did’nt expect these muffins to turn out so good, it just got emptied in no time, the kids loved it too.
Lemon poppy seed muffins
Lemon poppy seed muffins a light and tasty snack.
Dry mix:
- 1 and 1/2 cups wheat flour
- 1/2 cup sugar
- 1 tbsp black poppy seeds
- 1/2 tbsp baking powder
- 1/4 tsp baking soda
Wet mix:
- 4 tbsp melted butter
- 1 no egg
- 1/4 tsp salt
- 3/4 cup yogurt
- 1 tbsp lemon juice
- 1 tsp lemon zest

Preheat oven at 190 deg C for 10 mins.To a mixing bowl – add wheat flour,baking powder,baking soda and salt.Add sugar to it.

Add black poppy seeds, mix well and set aside.

In another mixing bowl – add an egg whisk until pale.Add curd.

Add lemon juice.Whisk once.

Add melted butter, mix it.Add flour mixture.

Add lemon zest.Mix with a spatula.Using an icecream scooper scoop out the batter.

Arrange muffin liners in muffin mould.Drop the scooped batter into the liners,sprinkle sugar on top.Bake in preheated oven at 190 deg C for 25-30 mins or until the top turns golden and crusty.

Serve warm!
- Do not skip the sugar sprinkles as topping.
How to make bisi bele bath recipe:
