Aadi koozh, easy aadi ragi koozh

Aadi koozh is made with ragi, kezhvaragu with other ingredients like buttermilk, raw onion, green chillies. I have added raw mango and ginger to make it more tasty and flavourful.
I have seen amma making ragi kanji with jaggery and make salted version with buttermilk, for breakfast. Otherwise, have not seen her making during the month of aadi. Also I have not tasted in the amman temples where they serve aadi koozh. But always tempted by this term aadi koozh. So I thought of asking my friends and couple of them told their version.
I will sure share the other one too, but first this aadi koozh recipe shared by Sugu (Sugumari). She regularly visits temple and involved in distributing prasadam to everyone which I always admire in her. It's not only about offering food to God, it's also the distribution to the people which makes us happy and content.
She called me to share the method she makes and also sent a sweetest voice note too. Tried and loved it. Me and Vj had this for breakfast. I understand there are various version, like fermenting before making koozh, adding rice to the kanji etc. But this too is very tasty and perfect for breakfast. This has mango in it which I love the best.

Ingredients

Ragi flour - 1/4 cup
Curd - 1/4 cup
Onion, chopped - 1/2 cup
Green chilli - 1
Coriander leaves, chopped - 1 tbsp
Ginger, grated - 1 tsp
Unripe mango , chopped - 3 tbsp
Salt - as needed
Water - as needed

Method:

  1. Chop finely onion, green chilli, coriander leaves, mango. Grate ginger and keep aside. Boil 1 & 1/2 cup water side by side.
  2. Dissolve ragi flour in 3/4 cup water using a whisk without any lumps.
  3. Once water starts to boil, pour the ragi, stirring simultaneously to avoid forming lumps.
  4. Keep the flame in medium and keep stirring, as it tends to get stuck/ burn at the bottom of vessel.
  5. Cook in medium flame until the colour changes dark and shiny. It took 5 mins for me to cook the ragi.
  6. Switch off the stove, add chopped items and stir well. Once warm enough to handle, add buttermilk. (Beat well 1/4 cup curd using a whisk until smooth. Add one cup water and make buttermilk)

Notes

  • Make sure to cook in medium flame and keep stirring to avoid getting burnt at the bottom.

     Congress Kadalekai, masala peanuts,recipe with video and step wise pictures. Congress Kadalekai is  a popular spicy tea time snack of Karnataka made using peanuts. I don't know why they call it as Congress Kadalekai but heard about that a lot. Recently when one of our friend visited Bangalore for vacation, i told him to get few bangalore famous snacks. One among them was Congress Kadalekai. I tasted them for the first time. He got that from the famous Variar bakery Bangalore. I am wanted to try that but i am always scared of the mess the raw peanuts creates after roasting and rubbing the skin off.  So I kept on postponing to make this Congress Kadalekai.
      Recently i saw Roasted unsalted peanuts in Sri Murugan stores, Singapore, while i visited to buy my Grocery. I have many time seen un roasted big size peanuts but this one was in normal size and i picked up the 500 gm packet immediately and put into my Grocery bag.      Roasted peanuts* 1/2 cup
     Oil  3/4 tblsp
     Red chili powder  1/2 tsp - 3/4 tsp
     Pepper powder  1/2 tsp
     Curry leaves   few 
     Salt  as needed
     Turmeric powder  1/2 tsp
     Asafoetida  a pinch
    Sugar  1/4 tsp
   *If using raw peanuts with skin, roast them first nicely for 10 minutes and then cool it and take out the skin. Then proceed with the recipe. 

Method :

  • In a pan add the oil. Add in the curry leaves.
  • Roast in a medium flame till it becomes crisp and ensure it should not change its colour. 
  • Add in the asafoetida.
  • Immediately add the roasted peanuts. 
  • Add the red chili powder, pepper powder, turmeric powder and salt.
  • The one i tasted from the shop was too spicy but i made it to suit my family's taste.
  • Mix and roast this in a low flame for 2-3 minutes.
  • Switch off the flame.
  • Add 1/4 tsp of sugar. I tasted a tinge of sweetness in my Congress kadalai and so i wanted to recreate that taste. But still it was spicy only.
  • This little sugar will balance the spiciness. 
  • Mix well.
  • Allow this to cool completely.
  • The peanuts will become very crisp after it cools down completely. 
  • Transfer this to a plate and mix this well with your hands. 
  • Break the curry leaves nicely and split the peanuts.
  • Congress kadalai is ready.
  • You can store this in an airtight container and consume this along with tea or coffee.
  • This roasted masala peanuts goes well with curd rice or any South Indian meal too.

Raisin water for babies and kids, Dry grapes water – Home remedy for constipation

Raisin water is an excellent home remedy for treating constipation in babies and kids.Raisins or dry grapes are soaked overnight and the juice is given to babies and kids the next day morning in empty stomach which gives a good relief and slowly reduces hard stool.

This is an age old method our grannies used to treat constipation in babies.

Please remember mothers feed is the best and its always good to start with other food(including water) only after the baby completes 6 months.So this raisin water can be given to babies only after 6 months.In case if you have started baby food in 4 months itself then this is suitable to feed after 3 months.

Raisin water for treating constipation for babies and kids.

  • 1 tbsp raisins
  • 2 tbsp water

For babies after 6 months:

  1. Measure a tbsp of raisins, add it to a bowl containing water.Rinse it well.

  2. Rinse well and discard the water.Now transfer rinsed dry grapes to a bowl.

  3. Add 1 tbsp water to it.Soak it overnight.

  4. Next day it would have bulged.Now squeeze the grapes well with your fingers.

  5. Now transfer it to a strainer along with water and strain it.Press well to extract the juice completely.Discard the raisins and feed raisins water to babies as first food in the morning.You can give 1 to 2 tsp of juice and gradually increase the quantity.

For babies after 1 year:

  1. Follow steps 1,2,3 then transfer soaked raisins along with the water, pulse it well.Transfer this to a strainer.

  2. Press well to extract juice completely.Discard the raisins and feed the juice alone.You can give 1 to 2 tsp of juice and gradually increase the quantity.

  • I used green dry grapes.You can use black dry grapes too.Make sure you buy organic grapes.
  • This raisin water or juice can be used as a natural sweetner for porridges.
  • Always rinse the grapes well before soaking.

For babies after 6 months:

  1. Measure a tbsp of raisins, add it to a bowl containing water.Rinse it well.
