Kozhukattai dough recipe, Kozhukattai maavu recipe – using store bought idiyappam flour.We used to make homemade rice flour and then use it for making kozhukattai / idiyappam.But now we get readymade flours available that you get it easily everywhere.I usually make homemade rice flour but sometimes I use store bought rice flour(idiayppam flour) too and it has never let me down mostly while making idiyappam and kozhukattai.
I usually follow the first method , but the water measure cannot be given accurately you need to pour little by little and keep mixing to form the dough.But for the second method I have given the measures.Either ways you can make perfect kozhukattai’s.
Kozhukattai dough recipe
Kozhukattai dough recipe – 2 methods
FOR METHOD 2 :
- 1 cup rice flour
- 1 and 1/2 cups water
- salt to taste
METHOD 1 :

Now prepare the outer dough.Measure and take rice flour in a mixing bowl,add salt.

Mix it once.Boil water until it bubbles up,switch off then add it to rice flour.Add little by little, do not add it fully at a stretch.

Mix with a laddle,once it starts to come together,Set aside for few mins until it is warm enough to handle with hand.Now bring everything together to form a smooth dough without any cracks.Keep covered with a wet cloth until use.Grease your hands with oil then handle the dough for making kozhukattai.
METHOD 2 :

Measure and take flour in a mixing bowl, add salt to it.Mix well.

Add 1 and 1/2 cups of water(normal water not hot water).Whisk well without any lumps.All this should be done off the stove.

Now switch on and keep the pan and start cooking in low flame.Keep whisking. At one stage it will start to thicken.

When its thick as shown you can switch over to a laddle.Keep cooking.

At one stage it will gather together, switch off.Knead it with your hands when it is still warm.Cover with a wet cloth until use.Your kozhukattai dough is ready.Grease your hands with oil then handle the dough for making kozhukattai.
- If you are buying store bought rice flour make sure to buy idiyappam flour.I use nirapara brand.
